PICK YOUR POISON

“Honeychurch Highball”

Ingredients:

– 2 oz.reposado tequila
– 1/4 oz. mezcal (for wash)
– 1 oz. honey syrup*
– 3/4 oz. lemon juice
– 2-3 dashes Angostura bitters
– lemon (garnish)

How to make the cocktail:

  1. Pour mezcal into a highball glass and swirl around (wash) to coat the glass—dumb out what doesn't stick.
  2. Pour the tequila, honey syrup, and lemon juice into a mixing tin with ice.
  3. Shake well.
  4. Strain into a the mezcal-washed highball glass.
  5. Add ice.
  6. Top with 2-3 dashes of Angostura bitters.
  7. Garnish with lemon peel.

*To make honey syrup: combine equal parts honey and hot water, and stir to combine.
