Ellie Alexander’s 12 Days of Cozy Bakes: Lime Mint Cupcakes

With the many challenges we have faced this year, I wanted to share something special this holiday season. After much thought and consideration as well as a fortuitous email from a reader requesting a recipe that never made it into a book, I came up with a plan to share 12 Days of Cozy Bakes. It’s perfecting timing with the release of the 12th book in my Bakeshop Mystery series, Chilled to the Cone coming later this month.

A dozen books calls for a dozen cozy bakes! I’m sharing recipes that made a cameo appearance in each of the books, but never made the final cut for the recipe section in the back. You can bake along with me and share with friends or neighbors, or save all the deliciousness for yourself. 

This recipe for Lime Mint Cupcakes was featured on the first day of 12 Days of Cozy Bakes, and you’ll find the other 11 recipes on my blog. Lime Mint Cupcakes:

½ cup butter

¾ cup sugar

1 tsp vanilla

2 eggs

1 ¼ cup flour

1 ½ tsp baking powder

1 tsp salt

½ cup coconut milk

Zest and juice of one lime

3-4 sprigs of fresh mint—chopped

Frosting:

1 cup butter

3 – 3 ½ cups powdered sugar

1 tsp vanilla

Zest and juice of ½ a lime

Fresh mint for decorating 

 

Directions:

Preheat oven to 350 degrees. Cream butter and sugar together with an electric mixer or by hand. Add vanilla and eggs and mix until smooth. Add flour, baking powder, and salt. Slowly add in coconut milk. Once batter is thick and creamy, mix in zest and lime juice, and fresh mint. Line cupcake tin with wrappers or coat with cooking spray. Fill batter ¾ full and bake at 350 degrees for fifteen to twenty minutes or until cupcakes are golden brown and center is cooked through. Remove from tray immediately and allow to cool.

As cupcakes are cooling cream butter in an electric mixer. Add in a cup of powdered sugar and vanilla and beat on low. Slowly add in remaining sugar and juice and zest of lime. Beat on high for five minutes or until the frosting is light and fluffy. Frost cooled cupcakes and finish with a sprig of mint.
